ABOUT
MATCHA

and why it’s so powerful

WHAT IS MATCHA?

At its simplest, Matcha is green powder tea. However, there are certain characteristics of this tea that make it different from other teas. Matcha tea comes from the plant Camellia Sinensis. Matcha tea is green in color and is a finely ground powder. During the last three weeks before harvest, the Camellia Sinensis plants are grown in the shade. The shade triggers the growth of leaves with improved flavor, and results in more L-theanine (an amino acid) and caffeine in Matcha than in other teas.

After hand-selecting the leaves to process, the stems and veins are removed. The selected leaves are then briefly steamed to halt the fermenting process. They are then dried and aged in refrigerators to enhance the flavor. After the aging process, the leaves are stone-ground into a fine powder. The resulting Matcha is typically dissolved in a liquid and consumed.

WHAT COUNTRIES PRODUCE MATCHA?

The only country that truly produces Matcha is Japan. But over the last few years as the Matcha craze has taken hold across the globe, many companies have begun selling ‘green tea powder’ under the name Matcha, even though it does not come from Japan and is not processed in the same way.

There are many companies selling green tea powder, labeled as Matcha. However, unless it was grown in Japan and processed properly, it is not considered Matcha. There is actually a huge taste difference between Matcha grown in Japan and ‘green tea powder’ grown in other countries. High quality, fresh Matcha is expensive. If the price seems too low, there is probably a reason for it.
